Ingredients

slices good-quality white bread, freshly toasted
4tsp.
wholegrain mustard

tomatoes, thinly sliced
40g
mature cheddar, grated
large handful fresh basil leaves
4tsp.
mayonnaise
2 cooked skinless chicken breasts, sliced - about 200 g
1
large avocado, stoned and thinly sliced
large handful rocket
Directions
Step 1
Lay four slices toasted bread on a board. Spread each with 1tsp mustard, then divide the tomato slices, cheese and basil equally among the four slices. Press another slice of toast on to each stack.
Step 2
Spread the top toast of each stack with 1tsp mayonnaise, then divide the chicken, avocado and rocket equally among the stacks. Season, then press final slice of toast on to each stack.
Step 3
Cut the stacks into quarters diagonally, then secure each quarter with a cocktail stick. Serve immediately.
