Ingredients
2
medium eggs, beaten
4Tbsp.
strong espresso, cooled
25g
butter
4
thick slices brioche
For the topping
100g
mascarpone
200g
double cream
40g
icing sugar, sifted
4tsp.
cocoa powder, plus extra for dusting
4Tbsp.
milk
Directions
Step 1In a wide shallow bowl, whisk together the eggs and espresso. Heat butter in a large, non-stick frying pan over low to medium heat. Working one at a time, dip bread slices into the egg mixture to soak, then add to the frying pan (do this in batches if your pan isn't big enough). Fry until golden on both sides. Repeat with remaining brioche.
Step 2In a medium bowl, whisk the mascarpone, double cream, icing sugar and cocoa powder until smooth. Add the milk and whip to soft peaks.
Step 3Top each piece of French toast with the mascarpone mixture and dust with cocoa powder. Serve.
If you fancy a stronger coffee taste to your tiramisu French toast, try dusting it with a small amount of espresso powder at the end.
The recipe would also work without the mascarpone, by just whipping up the cream (and leaving out the milk) to soft peaks with the icing sugar and cocoa powder.
