Heat the oil in a pan and fry the onion for 10min over a medium heat until golden, stirring from time to time to make sure it doesn't burn.
Add the garlic and cook for 1min. Add the mushrooms and toss lightly, then cover and cook for 2min.
Add the white wine and crème fraîche, season well with salt and freshly ground black pepper, and stir everything together. Cover, bring up to the boil and bubble for about 4min or until the mushrooms are tender, then stir in the chives.
