Quick hot chilli oil packet noodles
This speedy supper is inspired by a Chinese dish called You Po Che Mian, which is made by pouring hot oil over aromatics such as garlic, chilli and Szechuan pepper for a satisfying sizzle experience.

This easy noodle recipe is inspired by a Chinese dish called You Po Che Mian which is made by pouring hot oil over aromatics, often accompanied by hand pulled Biang Biang noodles. I am obsessed with the flavour of the sauce and this is a quick way to get a similar result at home! Keeping packet noodles in the cupboard is essential in my opinion for whipping up meals like this!
Ingredients
- 120 g
pack instant noodles
- 1
garlic clove, crushed
- 1/2 tsp.
chilli flakes
- 1/8 tsp.
ground Sichuan pepper
- 1 Tbsp.
soy sauce
- 1/2 Tbsp.
soy sauce
- 1/2 Tbsp.
white rice vinegar
- 2
spring onions, finely chopped
- 2 Tbsp.
vegetable or any neutral oil
Directions
- Step 1 Empty the noodles into a large heatproof bowl. Pour in just-boiled water from the kettle to just cover the noodles, making sure they are submerged. Set aside to soften for 5min, or until just cooked.
- Step 2Meanwhile, in a separate large bowl add the garlic, chilli flakes, Sichuan pepper, soy sauce, vinegar, and spring onions. Heat the oil in a small pan over high heat until smoking hot. Pour over the aromatics and mix until combined.
- Step 3Drain the noodles, add to the sauce bowl and toss to coat.
