5Tbsp. Taylors of Harrogate After Dark ground coffee
25g (1oz) unsalted butter, melted
350g (12oz) cream cheese
200g (7oz) icing sugar
250ml (9 fl oz) double cream
1tsp. vanilla extract
41/2Tbsp. vodka
1Tbsp. milk
coffee beans, to decorate
Directions
Step 1
Whiz the biscuits and 1tsp of the ground coffee in a food processor until the biscuits are finely crushed (alternatively, crush the biscuits with a rolling pin, tip into a bowl and stir in the coffee). Add the melted butter to the processor or bowl and pulse/mix until the mixture clumps together. Divide the mixture among 6 martini glasses and press to level. Chill until needed.
Step 2
Reserve 1tsp of the ground coffee, then put the rest in a small cafetière. pour over 75ml (3fl oz) freshly boiled water, and brew for 5 mins, then push down the plunger.
Step 3
Put the cream cheese, 175g (6oz) icing sugar, brewed coffee, and remaining ground coffee into a large bowl. Beat with an electric hand mixer until smooth.
Step 4
In a separate bowl, whip the cream, vanilla extract, 3tbsp of the vodka and remaining icing sugar using an electric handmixter until it just holds its shape, then gently fold half of it into the cream cheese bowl until combined. Stir the remaining vodka into the remaining cream along with the milk until smooth.
Step 5
Divide the coffee cheesecake mixture equally among the glasses, spreading to level. Top each glass with a sixth of the cream mixture, spreading gently to level. Chill for at least 30 mins. Then decorate each with a few coffee beans and serve.
