Toasting the bread brings out a freshly-baked flavour

(4oz) slices of fresh white, thick-cut bread
(1oz) butter
1 small onion, finely chopped
6 cloves
bay leaves
1/2 tsp nutmeg
(1 ¼ pint) whole milk
Toast the bread until golden. Whiz in a food processor to fine breadcrumbs.
Over a low heat, melt butter in a medium pan. Add onion, cloves, bay and nutmeg. Cook for 10min. Add milk; bring to boil. Remove from heat, strain through a sieve into a clean pan. Bring to boil again, then stir in breadcrumbs and season to taste. Simmer for 2min until thickened, adding a splash more milk if needed.
