Gooey ready-salted crisps-topped brownie recipe - they really shouldn't work, but they do

Rich pretzel brownies get topped with a ready-salted crisp and gooey marshmallow topping to create a flavour sensation that really shouldn't work - but it does!

Ingredients
For the brownie
- 250 g
butter, chopped, plus extra to grease
- 200 g
dark chocolate, roughly chopped
- 375 g
light brown soft sugar
- 3
medium eggs
- 175 g
plain flour
- 40 g
cocoa powder
- 60 g
pretzels
For the topping
- 125 g
butter
- 300 g
marshmallows
- 250 g
salted ridged crisps, crushed slightly
Directions
- Step 1For the brownie, in a medium pan gently heat 250g butter and chocolate, stirring frequently, until melted and smooth. Remove from the heat and leave to cool for 5min.
- Step 2Preheat oven to 180°C (160°C fan) mark 4. Grease and line a rough 23 x 30.5cm baking/roasting tin with baking parchment, making sure the parchment comes above the edges of the tin.
- Step 3Stir the sugar into the cooled chocolate mixture, followed by the eggs. Sift in the flour, cocoa powder and a pinch of fine salt and mix to combine. Mix in the pretzels. Scrape into the lined tin and smooth to level. Bake for 20min, or until a solid crust has formed. Leave to cool completely (in the tin).
- Step 4Once cool, for the topping; melt 125g butter and marshmallows in a heatproof bowl set over a pan of barely simmering water, stirring occasionally until smooth.
- Step 5 Remove bowl from heat and immediately stir in the crisps, mixing until coated. Scrape onto the top of the brownies , cover and chill for 30min until set. Serve in squares.
