Turkey Kielbasa With Apples and Lentils

Packed with smoky turkey kielbasa and hearty lentils simmered with apple cider, this saucy, stewy one-pot meal encapsulates all the cozy vibes we want in fall fare.

Ingredients

  • 2 1/2 Tbsp.

    olive oil, divided 

  • 1

    13-ounce package turkey kielbasa, sliced 1/3 inch thick on bias

  • 1 1/2 cups

    apple cider, divided

  • 1

    yellow onion, sliced into 1/4-inch wedges

  • Kosher salt and pepper

  • 1

    Gala apple, cored and sliced into 1/4-inch wedges 

  • 1 Tbsp.

    whole-grain mustard

  • 1

    17.6-ounce package cooked lentils

  • 2 Tbsp.

    red wine vinegar

  • 1/2 cup

    flat-leaf parsley leaves, finely chopped 

Directions

    1. Step 1Heat 1 Tbsp oil in large Dutch oven on medium-high. Cook kielbasa in single layer, flipping halfway through, until browned on both sides, 5 to 6 minutes. Transfer to bowl. Add 1/4 cup cider to Dutch oven and scrape up browned bits from bottom; transfer to same bowl. 
    2. Step 2Reduce heat to medium and heat remaining 1 1/2 tablespoons oil. Add onion and cook, stirring occasionally, until tender and starting to brown, 3 to 4 minutes. Add apple, 1/2 teaspoon salt, and 1/4 tsp pepper and cook, stirring occasionally, until apple is tender, 3 to 4 minutes.
    3. Step 3Stir in mustard and remaining 1 1/4 cups cider and scrape any browned bits from bottom of pan. 
    4. Step 4Bring to a gentle simmer, then add lentils and kielbasa along with with juices from bowl. Simmer, stirring occasionally, until most of liquid is absorbed, 2 to 3 minutes. 
    5. Step 5Remove from heat and stir in vinegar and all but 2 tablespoons parsley. Divide among plates and sprinkle with remaining 2 tablespoons parsley.
