Easy Tempeh Lettuce Wraps

These easy lettuce wraps are a fresh, simple choice to add protein and flavor to your day.

Ingredients

  • 1/2 cup cooked quinoa (recipe link in directions)
  • 1/4 cup chopped zucchini
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • Pinch of coarse salt
  • pinch of pepper
  • 3 leaves Boston lettuce
  • 1 piece roasted tempeh (recipe link in directions)
  • 1/4 cup shredded red cabbage
  • cilantro or mint
  • 2 Tbsp. plain 2% Greek yogurt
  • Lime wedges

Directions

    1. Step 1Toss cooked quinoa with ¼ cup each chopped zucchini, onions, and tomatoes.
    2. Step 2Season with a pinch of coarse salt and some pepper.
    3. Step 3Use Boston lettuce leaves to make 3 taco-like wraps, filling with quinoa-vegetable mixture and topping with 1 piece roasted tempeh (chopped), shredded red cabbage, cilantro or mint, and Greek yogurt.
    4. Step 4Serve with lime wedges.
