Easy Tempeh Lettuce Wraps

These easy lettuce wraps are a fresh, simple choice to add protein and flavor to your day.

Ingredients
- 1/2 cup cooked quinoa (recipe link in directions)
- 1/4 cup chopped zucchini
- 1/4 cup chopped onions
- 1/4 cup chopped tomatoes
- Pinch of coarse salt
- pinch of pepper
- 3 leaves Boston lettuce
- 1 piece roasted tempeh (recipe link in directions)
- 1/4 cup shredded red cabbage
- cilantro or mint
- 2 Tbsp. plain 2% Greek yogurt
- Lime wedges
Directions
- Step 1Toss cooked quinoa with ¼ cup each chopped zucchini, onions, and tomatoes.
- Step 2Season with a pinch of coarse salt and some pepper.
- Step 3Use Boston lettuce leaves to make 3 taco-like wraps, filling with quinoa-vegetable mixture and topping with 1 piece roasted tempeh (chopped), shredded red cabbage, cilantro or mint, and Greek yogurt.
- Step 4Serve with lime wedges.
