Pepper and Black Bean Salad with Citrus Dressing

This light, citrusy salad is about to make your bagged lunch way more interesting.

Ingredients
- 2 Tbsp. Prep Day Citrus Dressing
- 1 cup canned black beans
- 1 Tbsp. cilantro
- 2 Tbsp. scallion
- 1/4 tsp. cumin
- 2 cups chopped romaine
- 1 cup chopped red bell pepper
- 1/2 cup chopped cucumber
- 1/4 cup chopped mango
- 1 Tbsp. pumpkin seeds
Directions
- Step 1Spoon Prep Day Citrus Dressing into bottom of a bowl or container.
- Step 2Add rinsed and drained canned black beans mixed with 1 tablespoon scallion, cilantro, and cumin.
- Step 3Top with chopped romaine, chopped red bell pepper, chopped cucumber, chopped mango, another tablespoon chopped scallion, and pumpkin seeds. Keep chilled.
- Step 4Toss or shake when ready to eat.
