Ingredients

Applesauce-Raisin Cookies:

  • 2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. salt
  • 1/2 cup butter or margarine
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1 medium Granny Smith apple
  • 1 cup dark raisins
  • 1 cup walnuts

Lemon Glaze:

  • 1 cup confectioners' sugar
  • 2 Tbsp. fresh lemon juice

Directions

    1. Step 1Preheat oven to 375 degrees F. Grease 2 large cookie sheets.
    2. Step 2Prepare Applesauce-Raisin Cookies: On waxed paper, combine flour, baking powder, baking soda, cinnamon, allspice, and salt.
    3. Step 3In large bowl, with mixer at medium speed, beat butter and sugars until light and fluffy. Reduce speed to low; beat in egg, applesauce, and vanilla until well combined. Beat in flour mixture just until blended. With spoon, stir in apple, raisins, and walnuts if using.
    4. Step 4Drop dough by rounded measuring tablespoons, 1 inch apart, on prepared cookie sheets. Bake cookies on 2 oven racks 20 to 22 minutes or until lightly browned around edges and set, rotating cookie sheets between upper and lower racks halfway through baking.
    5. Step 5Prepare Lemon Glaze: In small bowl, stir confectioners' sugar and lemon juice until smooth.
    6. Step 6Transfer cookies to wire racks. With pastry brush, brush glaze over warm cookies; cool completely.
