Ginger Citrus Spritzes

Fizzy with a kick of fresh ginger, these nonalcoholic spritzes are every bit as celebratory as their boozy counterparts.

Ingredients
- 1 1/4 cups
fresh grapefruit juice
- 1/2 cup
fresh lemon juice, plus lemon twists for garnish
- 1
2-inch piece fresh ginger, peeled and thinly sliced
- 2 Tbsp.
pure maple syrup
Pinch of cayenne pepper
- 1 L
grapefruit seltzer, chilled
Directions
- Step 1In small saucepan, combine both juices, ginger, maple syrup, and cayenne pepper. Bring to a gentle simmer, remove from heat, and let steep 10 minutes.
- Step 2Strain through fine-mesh sieve into jar, cover, and refrigerate until cold, about 1 hour.
- Step 3For each serving, pour 1/4 cup juice mixture into ice-filled glass, top with scant 3/4 cup grapefruit seltzer, and garnish with lemon twist.
