Classic Pasta Dough

Turn this homemade dough into the pasta of your choice.

Ingredients

  • 3 cups all-purpose flour, plus more for dusting
  • 4 large eggs
  • 3/4 tsp. Kosher salt

Directions

    1. Step 1In food processor, combine flour, eggs and salt and process until shaggy pebble consistency. The dough should be soft and come together when squeezed, but not be sticky. If it’s sticky, add extra Tbsp flour and pulse.
    2. Step 2Turn dough out onto clean work surface, gather into ball and knead to make a smooth dough, 2 to 3 minutes. (Dough will be somewhat firm; it will soften slightly once refrigerated.) Cover tightly with plastic wrap and let rest in refrigerator at least 30 minutes.
    3. Step 3Lightly flour large baking sheet. Cut dough into 4 pieces, transfer to prepared baking sheet and cover with plastic wrap.

For Pasta Sheets: Working with 1 piece of dough at a time, pat into an oval and lightly dust with flour. Using pasta roller on widest setting, run dough through machine. Fold dough into thirds, turn so one of the open sides goes into roller first and repeat three more times, until dough is smooth.Reduce setting one notch, lightly dust dough with flour and run through machine once. Repeat, reducing setting one notch each time you pass pasta through machine. For noodles, proceed with directions below.

For Long Noodles: Line large baking sheet with parchment paper. Prepare pasta sheets, then cut sheet of dough in half and cover the rest in plastic wrap.Working with half a sheet at a time, lightly dust with flour, then pass through roller using noodle attachment; cut into 12-inch lengths. Toss with more flour, transfer to prepared baking sheet and let dry at least 30 minutes. Repeat, working with one piece of dough at a time, rolling and cutting remaining dough.

For Tubular Shapes: Line large rimmed baking sheet with parchment paper. Using pasta extruder fitted with a shape dial, on Low speed, pass golf-ball-size pieces of dough through, cutting pieces into 11/2-inch-long shapes. Transfer to prepared baking sheet and let dry at least 30 minutes.
