Ingredients

  • 8 oz. lump crab meat
  • 1/2 cup very finely chopped ripe mango
  • 3 Tbsp. finely chopped fresh cilantro
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • thin slices of mini cucumber
  • White bread

Directions

    1. Step 1Stir together crab meat, mango, cilantro, olive oil, lime juice, salt and pepper until just combined.
    2. Step 2Place thin slices mini cucumber on soft white bread to form thin layer; top with crab salad, then more bread. Cut off crusts and cut into squares or, with 2-inch round cutter, cut into circles.
