Ingredients

large Kirby cucumber, peeled
Kosher salt
- 1 cup
whole-milk Greek yogurt
- 2 Tbsp.
olive oil
- 1/2 tsp.
lemon zest, plus 1 Tbsp lemon juice
- 1
scallion, finely chopped
- 1 Tbsp.
finely chopped fresh dill
- 1 Tbsp.
finely chopped fresh mint
Directions
Cut cucumber lengthwise in half; scoop out seeds. Coarsely grate cucumber; toss with 1/4 teaspoon salt, and let sit 10 minutes. Transfer to double layer of paper towels; squeeze dry. In medium bowl, combine yogurt, oil, lemon zest and juice, and 1/4 teaspoon salt. Fold in cucumber, scallion, dill, and mint.
