Ingredients

  • 2 Tbsp. toasted sesame oil
  • 2 Tbsp. finely chopped peeled fresh ginger
  • 2 large shallots
  • 1/4 tsp. Kosher salt
  • 1 lb. beef flank steak, cut into bite-size pieces
  • 1 1/2 cups thinly sliced bell pepper
  • 1/2 cup chopped celery
  • 1/4 cup lower-sodium soy sauce
  • 2 Tbsp. rice vinegar
  • 2 1/2 cups cooked rice
  • 8 cups thinly sliced boy choy

Directions

    1. Step 1In a deep 12" skillet, heat sesame oil and ginger on medium-high. Add shallots. Cook 1 to 3 minutes or until golden, stirring. Add salt and steak. Cook 3 minutes or until browned. Transfer to plate.
    2. Step 2Reduce heat to medium. Into skillet, stir bell pepper and celery. Cook 3 to 5 minutes.
    3. Step 3In a small bowl, whisk soy sauce and rice vinegar; stir into skillet along with browned steak, cooked rice, and bok choy.
    4. Step 4Cook 5 minutes or until veggies are softened and proteins are cooked, stirring and scraping.
