Our favorite chicken salad recipe only requires three steps, and serves up to four in less than 30 minutes! In addition to being a quick and easy lunch, this dish couldn’t be more versatile. While we recommend using shredded cooked chicken breast, you can use rotisserie, leftovers from a recent chicken breast recipe, or even canned chicken in a pinch! Experiment with adding chopped celery or onion to your mixture for even more crunch, or switch out the pickle brine for pickle relish for some added flavor and texture.

Ingredients
- 1/4 cup
sour cream or Greek yogurt
- 1/4 cup
mayonnaise
- 2 Tbsp.
pickle brine
Kosher salt and pepper
- 3 cups
shredded cooked chicken breast
- 1/4 cup
flat-leaf parsley, chopped
- 1/4 cup
fresh dill, chopped
- 4
rolls, split and toasted if desired
Lettuce, pickles and potato chips, for serving
Directions
- Step 1In large bowl, whisk together sour cream or yogurt, mayonnaise, pickle brine, and 1/4 teaspoon each salt and pepper.
- Step 2Add chicken and toss to coat, then fold in parsley and dill.
- Step 3Form sandwiches on rolls with lettuce, chicken salad, pickles, and potato chips.
