Baked Ham With Root Beer Glaze

Ingredients

  • 1 1/2

    fully cooked bone-in smoked ham (about 7 pounds total; preferably shank end) 

  • 2 cups

    root beer

  • 1 cup

    light brown sugar

  • 3 Tbsp.

    grated fresh ginger

  • 2 Tbsp.

    whole grain mustard

  • 1 Tbsp.

    lemon juice

  • 2 Tbsp.

    whole cloves

Directions

    1. Step 1Heat oven to 325°F and set a rack inside a roasting pan. Place the ham cut-side down on cutting board and with tip of knife, score ham by making long cuts from top of ham to bottom, cutting through tough skin and going about 1/4 in. deep. Make second set of cuts perpendicular to first set to form diamond pattern all over ham. Place cut-side down on rack. 
    2. Step 2In medium bowl, whisk root beer, sugar, ginger, mustard and lemon juice. Pour all over ham. Press 1 clove into center of each diamond on surface of ham. Cover the ham and the pan with foil and bake 11⁄2 hours.
    3. Step 3Uncover, baste with root beer glaze in bottom of pan and bake, basting every 20 minutes, until the ham is heated through and the internal temperature registers 140°F, 1 to 11⁄2 hours more. Transfer hame to cutting board and remove and discard cloves. 
    4. Step 4Pour drippings from pan into small bowl. Slice ham, arrange on a platter and serve with pan drippings.
