BBQ Beef Nachos

Barbecue sauce is the secret ingredient that gives these nachos a little extra spice. No one will really know how easy it was to season these party snacks.

Ingredients

  • 1/4

    small red onion, thinly sliced

  • 2 Tbsp.

    fresh lime juice

  • Kosher salt

  • 1 Tbsp.

    olive oil

  • 1

    large yellow onion, finely chopped

  • 2

    cloves garlic, pressed

  • 1 lb.

    ground beef 

  • 1 cup

    barbecue sauce

  • 1/2 cup

    canned tomato sauce

  • 6 oz.

    tortilla chips (about 7 cups)

  • 8 oz.

    Monterey Jack cheese, coarsely grated (about 2 cups)

  • 3

    scallions, thinly sliced

  • 1

    ripe avocado, diced

Directions

    1. Step 1Heat oven to 450°F. In small bowl, combine red onion, lime juice, and pinch salt and let stand.
    2. Step 2Heat oil in large skillet on medium. Add yellow onion and 1/4 teaspoon salt and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Stir in garlic and cook 1 minute.
    3. Step 3Add beef and cook, breaking up into small pieces, 5 minutes. Stir in barbecue sauce and tomato sauce and simmer until slightly thickened, 4 to 5 minutes.
    4. Step 4On rimmed baking sheet, toss chips and half of cheese. Top with beef mixture and sprinkle remaining cheese on top. Bake until cheese has melted, 3 to 4 minutes.
    5. Step 5Top nachos with scallions, avocado, and pickled red onion.
