These flavor-packed sliders are a step above traditional burgers.

Ingredients

  • 1

    large egg

  • 1 tsp.

    ground cumin

  • 1/2 tsp.

    ground coriander

  • Kosher salt

  • Pepper 

  • 2 Tbsp.

    panko

  • 1/4 cup

    fresh parsley, finely chopped

  • 1/4 cup

    fresh mint, finely chopped

  • 1 Tbsp.

    finely grated lemon zest

  • 1 1/2 lb.

    ground lamb, beef, or pork

  • 1/2 cup

    pickled red cherry peppers (we used Peppadew peppers)

  • 1/4 cup

    feta cheese

  • 1

    scallion, sliced

  • 1 Tbsp.

    sherry vinegar

  • 16

    small rolls, toasted

  • Lettuce, for serving

Directions

    1. Step 1Heat broiler and line rimmed baking sheet with foil.
    2. Step 2In large bowl, whisk together egg, 1 Tbsp water, cumin, coriander and 3/4 teaspoon each salt and pepper. Stir in panko and let sit 2 minutes. Add parsley, mint and lemon zest and toss to combine. Mix in lamb, then shape into 16 small patties. Transfer to prepared baking sheet and broil until just cooked through, 6 to 8 minutes.
    3. Step 3Meanwhile, make relish: In food processor, puree pickled peppers, feta, scallion and vinegar. Form sliders with rolls, lettuce, relish and patties.
