Mahogany Chicken and Broccoli

"Mahogany" here refers to a mix of soy and honey that gives a dish's glaze its rich color and caramelized flavor. Try it on pork tenderloin, too!

Ingredients
- 2 Tbsp. lower-sodium soy sauce
- 2 Tbsp. honey
- 2 cloves garlic, pressed
- 2 tsp. peeled and grated fresh ginger
- 1 1/2 lb. chicken thighs, fat trimmed
- 1 bunch green onions, cut into 2-in. lengths
- 1 lb. broccoli florets
- 2 Tbsp. vegetable oil
- 1/8 tsp. salt
Directions
- Step 1Line 2 rimmed baking sheets with foil. In large bowl, whisk together the soy sauce, honey, garlic, and ginger. Add chicken thighs and green onions; toss to coat.
- Step 2Arrange chicken, skin side up, and green onions on 1 prepared baking sheet. On other prepared baking sheet, toss broccoli florets with vegetable oil and salt; arrange in single layer.
- Step 3Roast chicken and broccoli in 450°F oven 30 minutes or until chicken is cooked through (165°F) and broccoli is tender.
