This dish is a spin on an Italian classic — substitute ground lamb for ground beef and add fresh mint leaves for a tasty twist on a traditional Italian meal.

Ingredients

  • 1 lb. ground lamb
  • 1 small red pepper
  • 3 clove garlic
  • 1 1/2 tsp. ground cumin
  • 1 1/2 tsp. ground coriander
  • 1 lb. penne rigate
  • 3 Tbsp. tomato paste
  • 1 cup fresh mint leaves
  • 1/2 cup grated Pecorino cheese

Directions

    1. Step 1Heat large covered saucepot of salted water to boiling on high.
    2. Step 2Heat 12-inch skillet on medium-high. Add lamb; sprinkle with 1/2 teaspoon salt. Cook 3 minutes or until browned, breaking up with back of wooden spoon. Add red pepper, garlic, cumin, coriander, and pinch of salt; cook 3 minutes or until beginning to soften, stirring occasionally.
    3. Step 3Meanwhile, cook pasta as label directs. Reserve 1 cup cooking water; set aside. Drain pasta and return to pot. Stir in tomato paste and reserved pasta cooking water. Cook 2 minutes, stirring.
    4. Step 4Stir lamb mixture, mint, and Pecorino into pasta in pot, tossing to combine.
