Southwest Steak Wraps

Serve up sliced steak, fresh corn, cilantro, black beans, and queso fresco in a wrap, not a taco shell, for a fun twist on #TacoTuesday.

Ingredients
- 12 oz.
skirt steak
Kosher salt and pepper
- 2 cups
fresh corn kernels (from 2 large ears)
- 1/2
small red onion, finely chopped
- 1 Tbsp.
lime juice
- 1/4 cup
fresh cilantro, finely chopped
- 4
10-inch wraps
- 1
15-ounce can black beans, rinsed
- 1/4 cup
crumbled queso fresco
Directions
- Step 1Season steak with ½ teaspoon each salt and pepper. Broil or grill on medium-high to desired doneness, 3 to 4 minutes per side for medium-rare. Let rest before slicing.
- Step 2Meanwhile, in a medium bowl, toss corn, red onion, lime juice, cilantro, and pinch salt.
- Step 3Divide corn salad, beans, and steak among wraps. Top with cheese and roll tightly.
